I'm starting to dabble in terrain making and recently bought some pink thick extruded polystyrene insulation as the base. What do you guys recommend I use as an adhesive for my brick walls, buildings etc. ?
I'm thinking along the lines of elmer's glue but don't want to go buy some if it'll be useless

Elmers will be fine as long as you stay away from the school glues which are more watery. I have been working my way through a gallon of Elmers Glue All since the Storm of Chaos. (I used about half of the gallon on 2 big projects and have been re-filling one of those small 7 oz. glue bottles ever since.)
I also use Aleene's Original Tacky Glue, which is faster drying, or at least I think it is.

Can second the recommendation on the Original Tacky Glue. It's a little more expensive than Elmers, but it's good stuff and works real well for most scenery/basing needs.

I use PVA glue myself. a good all rounder.

What I use depends on how big a piece I'm gluing. For most wall size things I use my hot glue gun or tacky glue. Large sections get Liquid Nails. That said, here is another thread dedicated to the same question:
