I see that there is the 2002 Annual Errata and the Empire In Flames errata, but is that it? Which would be the most updated version of everything I could find? Is Mordheimer the best place?

I'm pretty sure it includes all the errata changes made to the original items and stuff, like slings and spears. It has none of the fanmade stuff that you might find in other altered documents. I don't think it covers anything from EiF or later things like that, though.

There was an Errata from 2005 which was the last official Errata. You can find that Errata (Rules - Rules Review.pdf) in the Mordheim Official Rules folder of my OneDrive repository linked in my signature.
I think that some of this did make its way back into the main rulebook PDF although it didn't make it into some of the other PDFs (e.g. Osterlanders which still have the "Nouveau Riche" warband special rule in the PDF even though this has been removed from the warband).
